great for those who dont eat much meat and for those who love white sauce! :)

Spinach Pasta
serves 8-10 pax

Ingredients:

3 tbps olive oil
2 cloves garlic minced
1 big white scallion, chopped
2 eggs yolks
1/4 kilo smoked bacon, minced
1/4 kilo ground beef
2 cans all purpose cream
1/2 cup water
1 1/2 cup lightly packed spinach leaves
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon thyme
1 teaspoon basil
1/2 cup (or 1 cup na, para masaya!) grated parmesan cheese
10 oz penne or rigatoni pasta, cooked, drained, rinsed

okay, here we go:

In a sauce pan, sautee garlic and scallions, add up bacon fry until brown (not golden, but, brown and crispy). Add ground beef, pepper, salt, thyme, basil (if dried) and water, cook for 15 mins. (you can use fresh basil leaves though-- 1/2 cup fresh basil leaves will do.)

- In a bowl, mix in cream and two egg yolk and stir until combined before pouring into the saucepan. (the egg yolk will give the sauce its uber "creaminess" :) gv.) anyway, let the sauce simmer for about 10 mins while stirring.

- Pour in the spinach leaves (and the basil too-- if using fresh) and cook for another 5 mins, and you're done with the sauce! :)

- Spread the pasta evenly in a serving pan and pour the mixture into it. Then sprinkle, oh no, "smother" it with parmesan cheese and dig in! :)
